MEDITERRANEAN ZUCCHINI PASTA SALAD
This easy and healthy zucchini pasta salad is ideal for parties, potlucks, picnics, and eating that is everyday!

FOR THE DRESSING:
1/4 glass oil that is olive
2 tablespoons wine vinegar that is red
1 tablespoon lemon juice that is fresh
1 teaspoon dried out oregano
1/2 teaspoon dried parsley
1/2 teaspoon garlic powder
1 teaspoon Dijon mustard
Salt and pepper, to taste
FOR THE SALAD:
2 medium zucchini
1/2 small onion that is red thinly cut
1 (14-ounce) can quartered artichoke hearts, drained
1/2 cup halved pitted kalamata olives
1 (15-ounce) can chickpeas, rinsed and drained
1/2 cup crumbled feta cheese (optional)
2 cups baby spinach
1 cup cherry tomatoes, halved
Make the dressing. In a medium bowl, whisk together the oil that is olive vinegar, lemon juice, oregano, parsley, garlic powder, and mustard. Season and flavor with salt and pepper.
Make the salad. Cut the zucchini halfway through lengthwise, being careful to not pierce through the guts. Spiralize the zucchini with Blade C and place them in a dish that is large. Add the onion that is sliced artichoke hearts, olives, chickpeas, feta (if using), spinach, and tomatoes to the bowl.
Pour the dressing more than the salad and throw well to blend. Provide immediately or refrigerate until prepared to serve.
